Chef Zarah Zaragoza Manikan is a gelato artisan and innovator trained at Carpigiani Gelato University in Bologna, Italy. As the Founder of Gelato Manila and Head of R&D, she is known for blending authentic Italian gelato technology and techniques with uniquely Filipino ingredients, traditions, and flavors. Her creations transform beloved local favorites such as Polvoron, Taho, Ube, and Ginumis into premium gelato experiences while also honoring classic European recipes.
Chef Zarah is a ranked chef in the Gelato World Tour, having served as an assistant chef under the championship-winning team of Gelato Messina during the 2013 Gelato World Tour Australia. In 2014, she further distinguished herself by earning the People's Choice Award with Bono Gelato at the Gelato World Tour Singapore.
